Ingredients
- Cooking spray
- 1/4 cup toasted carob powder, plus extra for the pan
- 1/2 teaspoon baking powder
- 1/3 cup all-purpose flour
- 3 tablespoons canola oil
- 1/2 cup light brown sugar
- 2 large eggs, beaten
- 1 teaspoon vanilla extract

Step by Step
- Preheat the oven to 350 F.
- Lightly spray an 8×8 baking pan with cooking spray. Lightly coat the pan with carob powder.
- In a small bowl, whisk together the carob powder, baking powder, and flour. Set aside.
- In a medium bowl, combine the oil and sugar. Add the vanilla and eggs, stirring until well blended (small lumps are okay). Mix in the flour mixture, being careful not to overmix, and transfer the batter to the pan.
- Bake for 14-15 minutes. A knife or toothpick inserted in the center should have a few moist crumbs on it.
- Cool on a wire rack for 5 minutes before serving.
