In the last week, zucchini has become prolific in our house. And I don’t even grow it. My husband’s coworkers send home these amazing, huge zucchini – and I send loaves of chocolate zucchini bread back with him. This week, I did my usual baking of the bread, but also saved a little zucchini for myself so I could whip up some healthy muffins for the kids (okay, and me). I came up with these delicious zucchini oatmeal muffins.
My personal preference with muffins is that I don’t like them too sweet. Overly sweet muffins are called CUPCAKES. Cupcakes are great. I love them dearly – probably too much. but I also really love a lightly sweet muffin with a beautiful mug of strong coffee. It’s a pretty fantastic way to start the day.
These muffins are hearty. The oats really bulk them up and give them staying power. You could actually eat one of these with a piece of fruit for breakfast and feel satisfied.
Make a double batch of these bad boys and freeze them – you can easily pop a few out of the freezer the night before and you’ll have a healthy breakfast waiting for you when you stumble out of bed.
