Peas can be one of the easiest vegetable seeds to germinate and grow in your home garden. I simply get them damp by laying them out on a wet paper towel and cover with another damp paper towel. I put the paper towels on a sheet tray and put them on the top of the refrigerator (it keeps them warm up there) for a day or two. If you keep the paper towel moist with a spray bottle, in just a few days you will see the seeds begin to break open and sprout! Then you put them in the ground and let them grow. Easy!

I am one of those people who love peas both raw and cooked. This Wild Rice Salad with Peas has both. I use a packaged wild rice mix from my market that only takes about 20 minutes to cook. As you know, some of them can take 45 minutes, so choose one that works for your timeline. This wild rice mix also already had some seasoning, herbs and dried peppers. These just add more flavor to the salad. If you have plain rice, then season to your tastes. I like to cook the rice with some low sodium broth (chicken or vegetable) to add a bit more flavor.
Once the rice is cooked, it is really quick to assemble the Wild Rice Salad with Peas. I make the dressing while the rice is cooking and add that last. Stir it up and serve. It can be served warm or at room temperature.
