I love to cook with lemons. It might be my most favorite ingredient ever. It’s fresh and crisp and tart, and it can lend kick to lots of dishes. These whole grain lemony blueberry muffins, for instance? WAY better with lemon. Sweet, tart, and deliciously better.
And let’s talk about these blueberry muffins that fell in love with a lemon. They are whole grain. No white flour here folks. And they don’t just contain wheat flour (yawn), nosiree! I gave these muffins some depth and texture with oatmeal and cornmeal, and some moisture with Greek yogurt. It’s truly a match made in heaven, and now I’m so hungry from talking about these muffins that I’m going to have to break to go snack on one.
Are you still there? Great! You’ll love these for breakfast, a snack, with coffee, or a glass of milk. Your kids will probably like them, although they aren’t too sweet. If you wanted to add a little sweetness, you could make a quick icing with lemon juice and powdered sugar and drizzle that on, or you could just sprinkle some raw sugar on top before baking. But if I were you, I’d just make them as is.
