If you’re looking for a filling yet light dish, you’ve got to try this Warm Vegetable & Bulgur Salad. I made it today for lunch and it was so perfect on a chilly day.
And I’m sure I’ll be glad I made it tomorrow – cause I have leftovers!
You can change this salad up by using different veggies – eggplant would be great, or fresh tomatoes. If you’re not a fan of basil, try throwing in some fresh spinach or another favorite leafy herb. The goat cheese is awesome, but feta would be great too…or no cheese if cheese isn’t your thing (cheese is definitely my thing).
