If you’re interested in clean eating, this warm kale, butternut squash and farro salad is for you! Simple ingredients and flavors, yet so satisfying and hearty.
Not familiar with farro? It is also known as emmer wheat and is a whole grain. Farro is soft, yet slightly chewy, with a delicate nutty flavor. It is low in gluten and high in vitamins A, B, C and E.
So it’s great for you. Also great for you? Kale and butternut squash. I’m not sure if this salad could be healthier, especially with the addition of good-for-you fat from olive oil.
Is it delicious, you ask? Most definitely. The carmelized butternut squash is perfectly paired with the slightly bitter kale and nutty farro. The balsamic reduction, golden raisins and pecans take the flavors over the top. So, so good.
Farro can be a little time consuming to cook, so I highly recommend finding quick cooking farro. If you can’t find it, try to prepare the farro ahead of time so you have all the ingredients ready to go when you want to assemble the salad.
