Last night, I stood in the kitchen, door to the refrigerator wide open, looking for inspiration. I needed a recipe to post today AND I needed something for dinner.
I opened and shut the fridge door again, hoping something fabulous would materialize.
I still only saw the usual, lots of fruits and veggies, too many condiments to count, milk. Then I saw a Costco sized bag of romaine hearts and remembered a grilled romaine recipe I’d been wanting to try.
Of course, I couldn’t find the recipe, and it’s still to cold to grill. So I improvised.
Warm Caesar Salad, made under the broiler. Cooked lettuce tastes…well, not like you’d expect. There’s still some crunch to it, but it takes on a sweeter flavor. The panko, Parmesan, garlic and olive oil combine to create a crouton-y (yes, I made that up) crust. Just enough to taste amazing, but trust me, this won’t ruin your diet.
Start to finish, this recipe takes ten minutes, so it’s something you can easily whip up on a weeknight and serve alongside some grilled chicken or prawns. But you can also whip this up for a dinner party and I’m pretty sure your guests will be impressed. Each romaine half is a serving, so it’s a neat little salad package!
