One of my favorite cuisines is Turkish. While this food is largely unknown in the United States, it has all the flavors and textures that make Mediterranean food so attractive. Like many other foods of this region, Turkish cuisine is heavy on fresh fruits and vegetables, grilled meat, and the freshest seafood. It’s a very big country and so regionally foods differ however they all bare some resemblance.
I had the good fortune of taking a cooking class from a Turkish woman in our community. Every Saturday we gathered and all pitched in for ingredients. She would share 2-3 recipes and then we would eat together. Everyone also got to take food home. It was great! This turkey pide recipe is adapted from one that she taught us. You can mix up the ingredients to be whatever you’d like. Traditionally ground beef would be used, but ground turkey has much fewer calories and you’ll get all the flavor of the original! If you’re vegetarian, omit the meat and fill with tomatoes and some feta crumbles. Anything goes with this recipe.
