I’m always trying to make things healthier and tastier. I’ve been working on this recipe for a few weeks using ground beef and after some trial and error, came up with a few techniques and ingredients that make these meatballs healthy and tasty. The zucchini adds more vegetables and moisture to the meatballs. In addition, putting the meatballs in the freezer for 20-30 minutes prior to cooking helped firm up the meatballs and seemed to keep them from sticking to the pan. I include a recipe for sauce, but you could use half a jar of your favorite sauce to save a little time.
I like these turkey zucchini meatballs with steamed broccoli and a salad, but you could just as easily serve whole grain pasta or even spaghetti squash.
