Back in the day, when I lived in So Cal, this was my go to lunch. At the time there was a wonderful market called Mrs. Gooch’s (similar to today’s Whole Foods) that carried really good, line caught canned tuna and had the best avocadoes. We had avocado trees in our neighborhood, too, and I became obsessed with eating them! A really simple stacked “sandwich” with a bit of melted cheese on top to hold it altogether. I have recently rediscovered this little gem and it couldn’t be easier to put together for the whole family. This tuna melt is a healthy way to eat a sandwich without the bread.
I include dill pickles (that I canned this summer), fat free sour cream, scallions and heirloom tomatoes. You can put together whatever ingredients you love in your tuna fish. Sprinkle on some smoked paprika or red pepper flakes for extra flavor. You can really build this rice cake sandwich in many ways, so experiment with it and find the combination that you love!
