In the last few weeks I’ve been making smoothies like they’re going out of style. Probably because I’m obsessed with my
precious new Vitamix – and also because my daughter is demanding a ‘smoovie’ every morning.
I’m so thrilled my little one is in love with smoothies, because they’re a great chance to sneak some much needed nutrition into her sparse diet (she ate ONE ALMOND for breakfast the other day). For instance, this Tropical Chia Smoothie is packed full of good stuff – healthy fruits, coconut milk and the uber-nutritious chia seed. If you’re not familiar with chia seeds, you need to be. They’re an amazing source of omega-3’s and expand in liquid, so you feel fuller for longer.
I threw some unsweetened shredded coconut in as well, for a little texture. And please not, the coconut milk I used is not the stuff from the can, but instead the coconut milk that comes in the carton in the dairy section. Make sure you get unsweetened!
