You know those friends who only eat ethnic food? Israeli, Indian, Thai … the ones you secretly roll your eyes at? We’re not those friends.
We love food, but we usually stick to the more familiar flavors of Mexico, Italy, Germany, and Asia; that’s why this curried chicken salad is a nice surprise.
If you’re not used to the flavor of curry, you may not be sure about your first bite. For some reason, though, you can’t stop yourself from taking another — and another … and another. This dish is a great introduction to curry, because the curry isn’t full-force, smack-you-in-the-face. Instead, it’s a nice hint that makes you say, “Hmmm … Different!” In a good way.
Couscous is one of the only things my husband Tim (yes, the Tim in the recipe title) won’t eat, so we serve this over brown rice. Couscous would be a bit more authentic, though. ;)
