There are few things more wonderful in this world than hot muffins coming out of the oven, begging to be paired with a cup of hot coffee. Even better? Healthy muffins.
In my humble opinion, anyway. I’m a muffinaholic. As are my children. The other day, my five year old son BEGGED me to make cornmeal blueberry mini muffins (he knew the EXACT recipe title) he’d seen while watching the Pioneer Woman with me. That’s our Saturday morning ritual. We watch Pioneer Woman – he calls it ‘the ranch show’.
Clearly, he’s my child.
I love muffins because they’re basically a healthier cupcake…or at least they’re supposed to be. Much of the time, they’re as bad for you – or worse – than a cupcake…full of sugar and oil. For this week’s Pinterest Roundup, I thought it’d be fun to find some healthy muffins recipes. There were a bunch!
I’m super excited about a lot of these – they’re a little unusual. Which I love. I can’t wait to make the Rosemary Corn Muffins and the Pistachio Chai. YUM. I’m drooling.
