My favorite part of the holidays has to be Christmas morning. I love curling up on the couch with a big cup of coffee and watching the excitement in my children’s eyes as they rip through their stockings and play with their new toys. Or the boxes the toys came in. Whatever.
It’s all very A Christmas Story and I love it – and I don’t want to spend my entire morning in the kitchen. I love breakfast casseroles and muffins and breads and fresh fruit. I make NOTHING to order. And whatever I can put together the night before, I will.
I’ve scoured Pinterest and found some delish dishes for your Christmas morning feast that are healthy yet decadent. Check it out!
Mario Batali’s Eggs in Hell – eggs cooked in a spicy tomato sauce. YUM. Just yum.
Paleo Morning Glory Muffins. Good anytime of year, but also perfect for a Christmas breakfast or brunch.
How fun is this? A fruit Christmas tree…how could this not be a hit with the kids (or the adults)?
A make ahead sausage and mushroom strata, lightened up. Delish.
A fun and healthy twist on pancakes, holiday style.
Single serve baked herbed eggs. Elegant and easy – the oven does most of the work.
Skinny eggnog milkshake – a special treat while you’re opening gifts. I may even throw a shot of espresso in mine!
Shepherder’s breakfast – eggs cooked while nestled in hash browns.
Your family will think you’ve gone crazy – a banana split for breakfast? But this one is healthy. And you’ll be a rockstar.
So…what are YOU making for Christmas breakfast? Or are you lucky enough to have someone cook for you? Personally, I’m looking forward to a lazy Christmas morning with lots of snuggles, coffee and yummy (and healthy) food.
