This week at the Hot Dish, I’m shaking it up a bit. My boy is starting Kindergarten this coming Wednesday and I thought I’d dedicate today’s post to back to school – easy dinners, snacks, breakfasts. We’ve got so much right here on Shrinking Kitchen that it’s worth pulling up some of my favorites to re-share!
Breakfast – The Most Important Meal of the Day
I’ve recently discovered my son is a Hobbit. He asks for first breakfast, second breakfast, lunch, second lunch…you get the idea. If I’m sending him to school at 8 am, I’ve got to feed him something to fuel that brain and keep his belly full.
This Honey Almond Granola with some vanilla yogurt is a perfect morning kickstarter!
Give your kids Banana Oat Cookies for breakfast with a piece of fruit and some milk (or milk alternative). They’ll think they’re getting away with something, you’ll know better. Also, I was informed that honey isn’t vegan (my bad!), so if you do want these vegan, sub pure maple syrup.
Make these Individual Egg Bakes the night before and just heat them before serving. They’ll even last a few days in the fridge.
Snacks – Be Prepared for the Afternoon Rush!
Fruit snacks are the bomb.com. These are even better because they’re totally natural and full of fresh fruit!
Clean Eating No -Bake Granola Bars are a wonderful after school snack. Sweet and satisfying – and hearty enough to get them through till dinner.
One Pan Goulash means dinner on the table in less than 20 minutes. And one pan to clean. Cause dishes can suck it.
Another one dish wonder, Cheesy Chicken and Rice Bake is family pleasing and super quick to put together!
Slow cookers are a busy family’s best friend. Make some of these Slow Cooker Italian Turkey Meatballs, throw them over some whole wheat pasta and serve with a salad and you’re golden!
