The Creamy Cauliflower Soup…it’s the gift that keeps on giving. I started out making it today. I needed a big pot of creamy soup in my life and it sounded perfect. Then I saw red curry paste in my cupboard. Hmmm.
I threw some celery in the pot, cause I had a bunch to use up. I added some extra garlic. And in went the red curry paste.
If you are a fan of Thai red curry, you must try this soup. It hits the right flavor notes – the kaffir lime, lemongrass, the spices and the creamy coconut milk. But we’re talking a fraction of the calories and fat. The cauliflower base makes the soup substantial and creamy without dairy. The coconut milk takes is over the edge…dreamy.
Serve it up with lime wedges for squeezing and some sriracha sauce.
