I will never grow tired of Tex-Mex. Born and raised in Texas, chili powder and cumin are vital to my existence. I think they might run through my veins.
Okay, not really, but I do need to eat them. Often!
Heather posted an extremely tasty One Pan Goulash last year, and since then I’ve made it my own and created a delicious Tex-Mex version. My Tex-Mex Goulash is a one pan wonder that comes together in about 35 minutes, is full of flavor, and a huge hit with the kids. It’s the perfect dish to chase the chill from your bones on a wintry afternoon, but it would be just as yummy at a summer Fiesta with a wedge of lime and dollop of sour cream. Perfection as far as I’m concerned!
