I’m on this grain kick lately. The latest one I picked up in the bulk section? Bulgur wheat. It is super nutritious – high in fiber, protein and very low in sugar. Plus, it’s quick cooking.
I bought it and brought it home…and then I had no idea what to do with it.
Google to the rescue. The results? Elevnty billion results for tabbouleh. Tabbouleh is a traditional Lebanese dish – lots of chopped veggies, a bunch of flat leaf parsley, some mint and a lemon vinagrette. I whipped up a batch using bits and pieces of different recipes till I came up with something that suited my taste and nutritional needs. I left out the mint and upped the vegetables – cause I needed to bulk it up, and I just didn’t have mint on hand.
The result? Simple flavors but HUGE flavors. Absolutely delicious. It’s so fresh and satisfying. I threw some leftover chickpeas into mine and had a complete, one dish meal. The tabbouleh would also be amazing with some grilled chicken or steak.
Make a bunch and keep it in your fridge for a quick lunch or side dish. It keeps beautifully and the flavors just develop and get better over time.
