Dinner doesn’t get any simpler than this. In fact, I’m almost embarassed to post this recipe because it’s so easy. But there is an important reason I am posting it. Okay, more like three:
1. A lot of people are intimidated by fish preparation. This is seriously foolproof.
2. This is a perfect weeknight meal. You could even prep a bunch of packets the night before and cook them right before you’re ready to serve.
3. It’s delicious and fresh and wonderful.
I used Hake in this recipe, but you could use any firm white fish. Halibut, cod or tilapia would all work. I picked up Hake because it was super cheap. True story. I love a bargain, especially on fish, which tends to be expensive.
Feel free to make this recipe your own. Try different vegetables. Omit the capers and throw in a few kalamata olives and a handful of dill – or give the dish Latin flavor with lime slices, cumin and some chili powder. It’s basically a blank canvas open to your interpretation. Go for it!
