I have been on a vegetable roasting kick lately. I have mostly roasted root vegetables, and then I tried roasting some cauliflower florets and they came out with a lovely caramelized coating and were tender on the inside. I was hooked! Here is my latest recipe, using crispy kale and toasted pine nuts. You can add just about any spice combination you like on the cauliflower, but in this Roasted Cauliflower and Kale recipe, I chose: cumin, coriander and smoked paprika. Have fun trying different variations on the theme, as cauliflower is like a blank canvas, as it takes on whatever flavors you choose to add. What I love about roasting vegetables is how they become sweetened and softened with the heat, but they don’t lose their texture and become mushy.
It is perfect as a side dish to go with chicken or fish or as a vegetarian main dish. If you end up with some left overs, they are terrific made into a creamy cauliflower soup!
