When I initially made the Pesto Chicken for my family I mixed sundried tomato and basil pesto together with the panko bread crumbs. The result was delicious…my family loved it. Even though I tended to disagree, my daughter said THIS was the best recipe I had ever made. Who can argue with that? I like to use chicken thighs instead of chicken breasts because the thigh meat is very forgiving and much juicier. You can over cook a thigh and it will still be delicious.
Serve the Pesto Chicken with a tossed salad and steamed broccoli for an easy and healthy meal.
