Summer vegetables are amazing. I can’t get enough. The corn right now is especially incredible – so sweet and delicious. Corn is kind of starchy, so you can’t go nuts with it, but mixed with other vegetables, you can enjoy this summer delicacy guilt free!
Feel free to create your own mix! I used zucchini and carrots because that’s what I had hanging out in the crisper. You could easily throw in sweet peppers, fresh green beans and tomatoes – any fresh vegetable you fancy, really.
To make it interesting texturally, I used a vegetable peeler to create long ribbons of carrot and zucchini. A little shallot and olive oil created a fresh summer vegetable saute that is a great side to a piece of grilled fish or chicken.
