Summer Fruit Salsa

summer fruit salsa

Fruit salsa? Yes! Who says salsa has to be tomato based? Okay, some purists may…but they haven’t tried THIS yet.

I’m kind of obsessed with this salsa. As in, I like to stand in front of the open fridge and eat it with a spoon. Which is not such a bad thing -one serving is a mere 50 calories. You can eat the whole bowl for 200. So you can totally gorge on it and not feel guilty.

This recipe is super simple – and super delicious. And right now is prime time to take advantage of all of these fruits at the peak of freshness. So hit up your local fruit stand, and stock up. Don’t be afraid to experiment, either – plums, kiwi fruit and mangoes would also be amazing. If you have kids, get them involved in making this yummy snack. My four year old loved helping me pick the fruit out and mixed all the ingredients together once they were in the bowl. Since he helped ‘cook’ it, he was super excited to dig in – and this mama was happy to see him devouring so much fruit.

Serve this fruit salsa on it’s own, with cinnamon sugar pita or tortilla chips, or even over Greek yogurt!
