I love holidays…Christmas, Thanksgiving, Halloween, etc. There are always so many neat ideas that come out during holiday times to give me a little inspiration. When I see a neat craft or recipe, I try not to read how to make it so I can try and make it my own. This usually gets my mind going. I recently saw the cutest stuffed peppers made into jack-o-lanterns. I love stuffed peppers but haven’t made them in years. I immediately began thinking about how I could make a stuffed pepper that was full of all the veggies I love and all the flavor my family loves.
My daughter loves raw bell peppers but I realized during this recipe process, she doesn’t really like them cooked so rather than waste a bell pepper, I only prepare four stuffed peppers and then make 4 large meatballs in my cupcake pan. She loves having the filling without the cooked pepper.
A trip to the farmers market got me the sweetest, late-season corn and yellow squash. I bought multi-colored peppers to add a festive flair and got to work chopping and dicing. Besides the sweet peppers I think my favorite part is biting into the sweet, juicy corn.
