We are having a banner year with huge crops of large, sweet and delicious strawberries! Eating them fresh, freezing them and trying other ways to preserve them brought me to this pretty little parfait. I still have rhubarb in the garden along with all the strawberries, so this is a nice sauce/syrup combination that can go on just about anything; parfaits, waffles, low fat ice cream, sorbet or even on whole wheat toast.
My secret ingredient is beautiful ripe bing cherries! I think they add more flavor, a deeper color and little more body to the sauce. If you are like me, adding a little crunch into my parfaits makes them more interesting, hence the Grape Nuts. It doesn’t hurt that it gives us a little more protein and healthy grains to boot.
