You might think this looks like guacamole. And you’re kind of right. The green in this delicious Spring Hummus DOES start with avocado. But then I added in some spinach and arugula. And it got REALLY green and springlike, thus the name. To add bulk, but not fat? Chickpeas. It really is a guacamole/hummus hybrid. But guacmus? NO. Hummamole? Maybe.
Not only is this smack your momma good, it’s also completely good for you. Chickpeas (aka garbanzo beans) make up much of the dip – and that’s some serious protein. Then there’s the healthy fats from the avocado. And we all know how healthy dark, leafy greens are, right?
Honestly, just whip this up and eat it with a spoon and you’ve pretty much had a well rounded meal!
I served it up with carrot sticks. It’s also wonderful with pita chips or you can definitely serve it like guac – with some baked tortilla chips, in tacos, or even spooned over some freshly grilled chicken.
