Spinach and feta are one of my favorite flavor combinations. I adore spanakopita in all it’s buttery, flaky goodness. All those delicious layer of spinach and cheese, baked up in phyllo dough triangles – glistening and golden brown.
Drooling? Me too!
But buttery, flaky and healthful eating don’t always go hand in hand. It’s a cruel, cruel world, people.
Enter this spinach and feta crustless quiche…it’s packed full of iron rich spinach and highlighted with a bit of feta for that briny, tangy bite. I made this for a brunch potluck a few weeks back and it disappeared within minutes. You don’t even miss the crust. It’s that good.
Serve this for breakfast, brunch, lunch, dinner – it’s awesome with a big fruit or green salad and mimosas, naturally!
