My dad is a commercial salmon fisherman and every year I get a case of canned wild Alaskan sockeye. While I prefer fresh salmon, you can so SO much with canned salmon – it’s a great staple to keep in your pantry and a quick source of really healthy protein.
Growing up, my parents would eat salmon straight out of the can…I never really liked it like that. And I wasn’t particularly thrilled when they tried to pass it off as tuna in my sandwich (with Miracle Whip). So for many years, I cringed inside when I got my case. But now, I get excited, because I can eat these Spicy Salmon Cakes every day without complaint. They’ve got just the right amount of heat and are perfectly balanced by the broccoli slaw (Can’t find broccoli slaw? You can sub regular cabbage slaw mix!).
