You might be thinking – pulled pork – on a diet website? I know. It sounds crazy. But pork can be lean, especially if you give it a good trim. Also, you’ve got to eat it in moderation. This recipe serves eight, generously. The key is dividing the roast up and eating lots of vegetables to round things out.
That’s where the slaw comes in – spicy, citrusy, creamy and sweet, it cuts the richness of the pork beautifully.
Did I mention this is a perfect dish for entertaining? Throw the roast in the slow cooker in the morning and make the slaw while you’re at it. Then all you have to do is heat the tortillas and lay out the toppings. Simple.
