I was in the mood for something spicy one evening. I came across some fresh-made spicy Italian sausage at my local market and decided this just might hit the spot. I came up with this recipe with some of the ingredients I had in my kitchen like carrots, squash and zucchini. I love the color of the vegetables…orange, green and yellow. Because the vegetables are diced small, it can be an easy way to introduce your more finicky family members to veggies without overwhelming them.
We were with my sisters and their families this weekend so I decided to try it out on them. I fed seven adults and four children multiple servings…it was a huge hit. It can easily be cut in half for a smaller family. Enjoy!
