When a dear friend of mine asked that I bring two appetizers for her birthday celebration down at her favorite beach cabin, I had to come up with something special. There would be a group of 12-15 “foodies” gathering for some great food, craft cocktails and much laughter. What I came up with were easy, yummy and healthy versions of old classics. For something a little different, I decided to use some beautiful lettuces that I had growing in the garden. Another classic appetizer came to mind. Why not make Chicken Lettuce Cups? I can make the chicken mixture ahead of time and keep the lettuces cool in a salad spinner in the refrigerator until serving time. Being a wimp when it comes to spicy food, my version is what I like to call: Not So Spicy Chicken Lettuce Cups! You get all the flavor of the spices and peppers, but not quite the heat that many recipes call for. By all means though, if you like it hot, add more heat!!! Just warn me of the heat index before I dive in! This is great for kids who aren’t used to a lot of spice in their food, but starts to introduce them to some really good international flavors.
