My husband and I are trying to cut back on the amount of carbs we eat. I made stir fry the other night and instead of serving traditional steamed rice I served “faux” rice. Anyone who’s eaten low carb for any length of time knows what this is, but my low-carb eating husband totally thought it was real rice and didn’t put it on his plate. I made it again last night and told him what it was this time. He couldn’t believe how much the taste and texture was the same as real rice when served with this spicy chicken and broccoli.
I also love the light taste and high smoking point of coconut oil. Since I was going to have the temperature a little high, I chose coconut oil instead of vegetable oil.
I prep all my ingredients before I start cooking. The faux rice can be started when you start cooking the chicken and then removed from the heat to keep warm as you are completing the chicken and broccoli.
