When I was growing up my best friend’s mom used to make Spanish rice and I can remember afternoons sitting at their kitchen bar downing bowls of this delicious treat. A few weeks ago this same friend came to visit us, after having spent five years apart we quickly fell back into sync. I begged her to make her mom’s rice and it didn’t disappoint. The recipe itself is simple but we had to make a few alterations based on what is available here.
A few days later I decided to give it a little bit of a makeover. There’s nothing wrong with the original but I knew I could lighten it up and boost the protein to really make it healthier. The original recipe uses white rice, but you could use brown rice or another grain if you don’t like quinoa. The original recipe also uses quite hot peppers that we tempered down because my kids were eating too. You can make this Spanish Style Quinoa as spicy as you want by included fresh diced jalapenos, or something even hotter.
