Soba Noodles with Shiitake Mushrooms & Snow Peas
This was one of the first recipes I tried once switching to a mostly plant-based diet. I was a bit apprehensive, especially considering I had never tried {or heard of} soba noodles before. Once I looked, the ingredients were easy to find. This meal is sooooo tasty, extremely easy, and vegan-approved. Not a vegan? No worries, your mouth will be watering, too.

Step by step
- Boil 2 cups of water. Pour over the dried shitake and let them rehydrate, approximately five minutes. Pour the vegetable broth in a medium saucepan and also drain the mushroom soaking liquid into the saucepan, because it makes a delicious broth. Rough chop the drained shiitake mushrooms.
- Place all the mushrooms in a frying pan with about 1/4 cup of water, the soy sauce, and ginger. Cook over medium heat until the mushrooms are softened, around five minutes. If you are using fresh snow peas, add them to the pan as well. If using frozen, prepare them in the microwave.
- Meanwhile, bring the broth to a boil, add your package of soba noodles and just a few minutes until done -watch this or you will end up with some limp noodles! Add the veggies to the saucepan of noodles, give it a toss to combine, and serve!
