I like butternut squash pretty much any way it’s prepared. In ravioli. Roasted in chunks with a bit of olive oil, salt and pepper. Mashed up with a bunch of butter and brown sugar (sigh).
But I especially like it in soup. And this soup right here might be my favorite of all time.
It’s silky (without dairy). It’s smoky (without bacon). It’s sweet – naturally. Basically? It takes care of some major cravings and is totally comforting for less than 200 calories per serving. Added bonus? Butternut is chock full of Vitamins A and C with a good amount of fiber.
Serve this cozy soup with a big green salad and some crusty bread for a perfect autumn meal. If you’re feeling fancy, you an top the soup with some roasted pumpkin seeds or even…wait for it…crumbled bacon. Just a bit.
