I was running out of interesting things to put in my slow cooker and decided it was time to figure out tagine in the crock pot. It worked out beautifully and Moroccan Apricot Chicken is now one of my slow cooker standbys! I love the combination of sweet apricots, a lot of spice (not hot spice…flavorful spice) and creamy chickpeas. It’s perfection.
This Slow Cooker Moroccan Apricot Chicken dish is incredible to come home to after a long day- sweet, spicy and warming. Serve it with couscous or quinoa and a sprinkling of slivered almonds for a weekday trip to Morocco.
