Slow Cooker Cilantro Lime Chicken

I needed a quick meal to feed the little rugrats this evening, so I just threw this together into the slow cooker last minute before they came home from school. I turned it on high since I got a late start and was using frozen chicken breasts, and it was done before we left for dance a few hours later. Prep time was minimal and allowed me to hang out with the kiddos for a bit! All three kids gave it a thumbs up!

Slow Cooker Cilantro Lime Chicken

Prep Time: 15 minutes

Cook Time: 4 hours

Total Time: 4 hours, 15 minutes

Yield: 6

Slow Cooker Cilantro Lime Chicken

Gather

4 boneless chicken breasts
1 lime
1 cup fresh salsa
1/3 cup fresh cilantro
1 packet low-sodium taco seasoning
1 cup low-sodium chicken broth
tortillas {I use whole wheat}
sour cream {optional}
cheese {optional}

Step by step

  1. Pour 1 cup chicken broth in slow cooker.
  2. Mix in taco seasoning.
  3. Add chicken breasts. I just threw mine in totally frozen!
  4. Add in salsa and fresh cilantro, squeeze in juice from a fresh lime.
  5. Cook on high for 4-5 hours or low 6-7 hours.
  6. Chicken should be tender enough to shred with a fork!
  7. Scoop into a tortilla, add optional ingredients.
  8. ENJOY!

    I just put it in the crockpot and used peach salsa and 2 Tbs. white wine with my chicken broth. I can’t wait to try it!
