Sometimes you just need to make something easy. A meal that’s fast, no fuss, no fancy ingredients, that everyone will most definitely love. We don’t want to break the calorie bank either. This BBQ Beer Pulled Chicken comes together in your slow cooker in less than 5 minutes, cooks low and slow all day making your house smell divine, and then plates up in less time than it took to prepare. Throw a handful of kettle chips, a pickle spear, and some Summer Fruit Salsa on the plate and it’s dinner! Seriously.
It’s a ‘dream come true meal’ for those busy summer days when you’re running the kids to day camp and trying to hit the gym and grocery story and the nail salon all before you have to pick them up again.

It’s also great for a potluck dinner or block party. This recipes makes a TON of food. I used just shy of 3 pounds of chicken, and after I measured it all out, I could have made 16 sandwiches! There was enough room in my slow cooker to double this recipe, too!
I used an all natural barbecue sauce as to avoid the high fructose corn syrup and other junk that tends to sneak into things like jarred sauces, and I used an 8 ounce can of Michelob Ultra. (The beer probably negated the healthy-ness of my sauce, yo!) If you don’t have beer on hand, you could just sub in some water or chicken broth, and I’m sure you wouldn’t know the difference. I do highly recommend having a cold one on hand to wash your BBQ Beer Pulled Chicken sandwiches down with ;)
