It’s January and my active vegetable gardening days are pretty limited. My current choices of winter produce from the garden or the market are: beets, carrots, onions and kale. All wonderful vegetables by themselves, but I wondered what could I do that would put them together in a comforting and healthy dish? Beef borscht of course!
If you have never had beet soup with brisket, you must try this soup. It is a veritable winter garden in a bowl! The beef provides protein and a real depth of flavor, however, if you want to make this a vegetarian dish, you simply leave out the beef and trade the beef broth for vegetable broth. A bowl of Borscht with Beef and a piece of good whole grain bread and a glass of wine goes a long way in keeping the chill off. Especially this winter!
