AKA: “Wishing We Were at the Coast Boil”
My family loves being at the coast, but here in Round Rock, Texas, practically in the middle of the state, it’s quite a long drive to get there. Hence the name of this week’s recipe…”Wishing We were at the Coast Boil.” Fortunately for us, getting a taste of the coast is pretty easy with fresh/frozen shrimp always nearby. Being from Texas, my favorite are fresh Gulf shrimp, but there are plenty of other farm-raised options. Or if you live in an area that has an abundance of another seafood then you could use that. Of course this Shrimp & Sausage Boil is much better served up on a long picnic table covered in newspaper with a bunch of friends and family and no forks or knives…just your bare hands and a roll of paper towels. We usually make this for a crowd so it’s way too much for my family of three. I’ve shrunk my recipe to a reasonable number of servings that can be prepared in a large pot right in your own kitchen. This is a great summer dish that includes new potatoes and fresh, sweet corn. And if you really want to get into the spirit, spread butcher paper on your kitchen table and serve your family right from the pot…no plates or forks required.
