Here we are, running headlong into the holiday season, the season of overindulging. Of heavy comfort food. And guess what? I’ve got a salad recipe for you. Broccoli slaw, to be exact.
This is the logic…you need some salad, some roughage, to combat all the rich foods you’ll be tempted with. And sometimes, a salad just sounds really good. And trust me, this salad, is REALLY GOOD.
It’s crunchy, it’s light, and it’s satisfying. You get protein from the almonds and the edamame, so you’ll stay full, even though you’re just eating salad.
Trust me, you’ll want this recipe in your back pocket – it’s perfect for lunch the day after you’ve had maybe a few too many pigs in blankets at the company Christmas party. This recipe is enough for two generous meal sized portions, or four sides.
Make a big bowl, throw it in the fridge and you’re set.
