Savory Gluten Free Meatloaf

Ah, meatloaf. Eliciting groans from kids everywhere since the dawn of time. Well, I can certainly say that after trying this recipe, you won’t have to hear any protest any more. Our two year-old loves this gluten free meatloaf so much she actually asks for it, and my husband raved about it, then took half the loaf to work with him so he could share it with friends.
So, here you have it. The ingredient list may not read as particularly exciting, but this meatloaf packs a ton of flavor. We serve it with garlic mashed red potatoes, and a baby greens salad. Mmmmmmm! I can’t wait to make it again. Get ready for your family to look forward to meatloaf night!
Savory Gluten Free Meatloaf

Cook Time: 50 minutes

Total Time: 1 hour

Yield: 8 servings

Serving Size: 1/8 meatloaf


For the meatloaf:
2 lbs 98% lean ground beef
1 tsp garlic powder
1/2 sweet yellow onion, minced
2 tablespoons dried oregano
3/4 cup almond meal/flour
2 eggs
1/4 cup gluten free ketchup
1 tsp dried mint
1 tablespoon dried parsley
1 tablespoon sea salt
2 tsp ground black pepper
1 tablespoon red wine vinegar
For the glaze:
1/4 cup gluten free ketchup
2 tablespoons whole grain mustard
1/4 tsp cinnamon
1 tsp paprika
1 tablespoon brown sugar
Crumbled fontina cheese for garnish, if desired

Step by Step

  1. Preheat oven to 400 degrees.
  2. Place the ground beef in a large bowl, and mix the onion, garlic, oregano, and almond meal in with your hands.
  3. Add the eggs, ketchup, mint, parsley, salt, pepper, and vinegar. Mix well with your hands. Place in a greased 9x5 loaf pan.
  4. In a small bowl, mix together the ketchup, mustard, cinnamon, paprika, and brown sugar. The mixture should be fairly smooth, with the exception of the mustard grains.
  5. Brush the glaze mixture onto the top of the loaf, and place in the oven.
  6. Bake until the center of the meatloaf reaches at least 160 degrees -- about 50 minutes -- then remove from the oven to rest.
  7. Let the meatloaf rest for 10 minutes, then slice.
  8. Serve immediately, topped with crumbled fontina cheese, if desired. Enjoy!
