I’m in love with kale. It’s true. It’s like cabbage and spinach had a baby. A super nutritious baby, packed full of dietary fiber, protein, thiamin, riboflavin, folate, iron, magnesium and phosphorus. It’s also a very good source of vitamins A, C, K, B6, calcium, potassium, copper and manganese. In other words? Go out and buy some kale, your body with thank you!
This sauteed kale recipe is fabulous – kind of sweet, from the raisins, and a little sour, from the vinegar. The almonds give a surprising and delicious crunch.
I served this alongside braised pork ribs and baked potatoes. It would also be wonderful mixed into quinoa or topped with a piece of grilled chicken or fish.
