Sweet potatoes. I could eat them everyday. They are SO good. And good for you. Full of vitamin C, fiber and potassium, they’re a nutritional powerhouse. It’s not often something so delicious and rich tasting is so healthy.
So I probably SHOULD eat them everyday…right?
Roasting sweet potatoes is the best way to bring out the natural sugars and is a total treat. Even the pickiest eaters gobble these up. If your family is wary of the rosemary and cayenne, go ahead and omit it – but dang. It’s a total party in your mouth. Try it, at least once. You’ll fall in love.
This recipe is easy enough for a weekday dinner, but impressive enough to whip out for Thanksgiving. You’ll want to keep this one in your back pocket for the holidays. Trust me. It’s a great alternative to sweet potato casserole…much less work and much less fattening.
Serve these potatoes up with a roasted chicken, a lean pork roast – whatever floats your boat. Just promise me you’ll make them!
