Roasted Garlic Guacamole

Guacamole is one of those treats that many people put off when they’re watching calorie counts. It’s true avocados do have more fat and calories than some other vegetables but they’re full of healthy fats, lots of protein, and fiber – not to mention plenty of other vitamins and minerals. But don’t go out and buy a dry mix or premade guacamole when you can easily make this dip at home. You can control exactly what goes into the dip and avoid any of the normal fillers that add fat and calories. Where many people get in trouble isn’t with the dip itself but with fried tortilla chips. Opt for baked chips or vegetable strips instead.

A key ingredient in this dip is the use of roasted garlic. To make roasted garlic you’ll need an entire clove of garlic. Remove some of the papery outer layers and cut the very top off. Set cut side up on aluminum foil and drizzle lightly with olive oil and wrap the bulb in the foil. Place it in the oven at 400F for 30-45 minutes until the bulb is soft to the touch. Remove from the oven and allow to cool enough to touch. You now have roasted garlic to use in this guacamole or with another favorite recipe!

Total Time: 10 minutes

Yield: 2 servings

Serving Size: 1/2 of recipe

Gather

1 avocado
½ small, firm tomato
¼ red onion
½ small jalapeno (add as much or little as you like)
1 bulb roasted garlic
½ lime
Pinch of salt
1-2 tsp fat free plain Greek yogurt

Step by Step

  1. Remove the avocado flesh from the rind by cutting in half and scooping out with a spoon. Place in a mixing bowl. Use the back of a fork to mash, leaving some chunks.
  2. Dice ½ of a small firm tomato, and ¼ of a red onion. If you want to add some heat dice up a jalapeno pepper and add as well.
  3. Squeeze in the roasted garlic and juice of ½ lime. For additional creaminess add 1-2 tsp of fat free plain Greek yogurt. Finish with a pinch of salt and a final mix.
  4. Serve right away or leave in the refrigerator 30 minutes to 1 hour for the flavors to combine. The addition of lime juice will prevent discoloration.
  5. Eat with corn chips or fresh vegetable sticks.
