I will admit, I tend to use salads as a vehicle for cheese and nuts. This salad is no exception. The trick is to keep your portions in check – feel free to use as much greens as you like, but stay firm with the extra, calorie laden ingredients.
I know goat cheese is delicious. Stay strong.
Now, let’s talk about beets, shall we? Surely many of you have an aversion. It seems to stem from childhood – someone boiled the holy hell out of them and you were forced to eat them…am I close?
Boiled beets are gross. I know. But roasted beets? Oh my. Roasting brings out the sweet stickiness in the beets and the color? Gorgeous.
While it may seem time consuming to roast beets for a salad, it’s so worth it – and may I suggest roasting more than you’ll need? Because you’re going to want more. I promise.
