Does your family do ‘Meatless Monday’? We do, quite often. Kind of for health reasons, kind of for budget reasons. Plus, I usually need a detox after the weekend – that’s when I tend to do most of my bad comfort eating.
This polenta dish is most definitely comfort food…but it’s good for you. Plus, you can whack it all in one bowl, grab a glass of wine and curl up in front of a roaring fire…or American Idol. No judgement here.
Play around with your vegetable mix on this one. Pretty much anything goes – you’ll just want to adjust your roasting time for vegetables like carrots. They take a while longer. Yellow squash is wonderful – also cauliflower or cherry tomatoes. Whatever floats your veggie boat.
Whatever you do, make sure to drizzle a little extra balsamic vinegar over the polenta and vegetables right before eating…and a little goat or blue cheese never hurt.
