I just love pomegranate. It’s so pretty – lovely ruby red. It can be a little tricky to use – not the easiest thing to dig the seeds out of the fruit…but so worth it!
Over the last few weeks I’ve gotten pomegranates in my co-op basket, and last week I got a big bunch of asparagus. And I needed to use it. So guess what? I made this dish and it’s awesome!
There’s SO many wonderful flavors going on – the roasted asparagus is salty and hearty, the cheese is tangy and the pomegranate adds just the right amount of acidity.
If you’re looking for something gorgeous to serve at a dinner party – or if you just want to make it for yourself to feel fancy while you’re chilling in your yoga pants – make this dish. It’s fabulous to look at and even better to eat!
