Happy New Year! Fresh year, fresh start…right?
I am ready to jump headlong into healthy eating this year. But healthy doesn’t need to mean bland. And this salad is anything but bland. Cool cucumber pairs perfectly with with tart vinegar, sweetened with a little sugar and some pepper flakes add just the right amount of heat. It’s basically quick pickles…with Asian flair.
Serve up this cucumber salad with a piece or grilled chicken or some pan fried tofu and some brown rice. It will fill you up without filling you out – or boring your taste buds!
