The last few days have been a little stressful and I’m finding myself gravitating toward junk food. It’s a vicious cycle. I get busy and just can’t be bothered to make something fresh. Then all of the sudden I’m standing in front of the fridge with a spoon, hunting.
Or is that just me?

I suppose it’s pretty much a slaw, but instead of a mayonnaise-y dressing, it’s tossed in a creamy, yet light, tahini lime dressing. Plus, it’s loaded with fresh, crunch vegetables. Every bite is full of flavor.
You can most definitely stand in front of the open fridge door with a fork, devouring this salad, completely guilt free!
Perfect for summertime, you can throw some grilled chicken, some chickpeas or even a handful of sesame seeds into your Rainbow Salad and you’ll have a well rounded and light meal.
So make a double batch and keep it in your fridge. I promise you’ll feel so much better after digging into this salad than takeout or something from the microwave.
